| One thing’s for sure: Our diets need fixing.
Our vegetable consumption has flatlined since the 1980s, we average over 300 calories’ worth of sugar every day, and we’re subbing in ultra-processed foods, many of which are calorie-dense and nutrient-poor, for whole foods. All of this has happened while portion sizes have steadily increased. As of this writing, nearly three-quarters of American adults are overweight or obese, which can put them at higher risk of diabetes, heart disease and some cancers.
