| If food were music, margarine would be a cover band, going up on stage each night playing the songs that butter made famous. Margarine knows it wouldn’t exist if people hadn’t loved butter first. We buy margarine because it’s cheap, and maybe because it stays soft when cold (try buttering sandwich bread on a winter morning; it’s a mess), and maybe because we think it’s better for us. But that last point is very much up for debate, and has been for decades. Read a few different studies on the subject and you’ll find claims for both as the healthy alternative. They both contain fat, but different kinds. Butter is more natural, but does that matter? In the end, people want to know which one they can spread on their English muffin without worrying that they’re setting themselves up for a heart attack.
We spoke to five experts in the hopes of finding consensus.
Richard Bazinet, Professor of Nutritional Sciences, University of Toronto:
I don’t think it’s a simple question and framing it that way can be a little tricky. The history is: there was butter, and then (at some point) butter became problematic because of the saturated fat content. Vegetable oils were thought to be good for you. They came up with technologies to solidify vegetable oils, lower your cholesterol, everything was great. Then probably in the early ‘90s we discovered trans fats. It turned out margarines had a lot of trans fats in them, so they were demonized. And now we’re at kind of a turning point in the literature, where we’re not so sure the saturated fats (in butter) are all that bad for you. And the trans fat has been removed from margarine, and we’re supposed to assume now that they’ve taken that out, that these margarines are good for us. There’ s not a lot of heads-up literature really comparing the two of them. Which one’s less worse might be a better way to frame the question.
